Fix compatibility with newer flatbuffers and protobuf
Bookworm provides new version of flatbuffers and protobuf not compatible with onnxruntime.
This fix was pushed to salsa: https://salsa.debian.org/deeplearning-team/onnxruntime/-/commit/68cc4cd60ed61467d778ccf68fb65aec7c20e187
Since this package can be built on Bookworm, I plan to upload it for a review on Debian side.
