resolved all threads

Setting to draft as we don’t have the machinery configured to pull logs into a log processor of any kind, and right now logfmt is a bit more useful than JSON.

this is a chicken and an egg though; also that only goes for the proxies in production currently not the ones on k8s for staging -- Can we make this configurable?
