Delete old inventory

Pablo Vigo Mas requested to merge wip/pvigo/delete-old-inventory into main

Delete the old inventory.yaml and ansible.cfg files. These old files were not deleted in the last merge. The new inventories folder has the Development and Production environments. The new ansible.cfg is configured with Development cluster by default.
