T7337: tls-stack: Update to reflect current state

      One high level thing to consider here that I didn't think of last night - these changes are going to be correct for v2022. I assume we're not backporting changes to v2019-v2021, some of which will still have over a years worth of lifetime on them.

      We need to ensure that the document makes it clear that these changes are as of v2022 and should document what is also present in the older versions.
