Update from debian/bookworm-backports for apertis/v2025dev1

Since we have a special policy in pulling pipewire from backport repositories, this MR updates pipewire to the symbolic version 1.0.0.

The same is done for wireplumber to stay in sync with wireplumber!42 (merged).
