Canterbury is not intended to be portable: we only target GNU/Linux. We could #define _GNU_SOURCE (etc.) before including any header files, but this way we get them all defined in config.h, which seems easier. This was motivated by wanting to use the Linux-specific setresuid() in an automated test (which needs _GNU_SOURCE), but anything recent, Linux-specific or GNU-specific would need this.
